A nice Cauliflower Walnut Soup

Ingredients:

  • 1 medium cauliflower, broken into florets
  • 1 onion, roughly chopped
  • 450ml/3-4 pt vegetable5 stock
  • 450ml/3-4 pt milk stock
  • 450ml/3-4 pt milk
  • 25g/1 oz walnut pieces
  • Salt and freshly ground
  • Black pepper

Here’s the way to prepare:
Take a large heavy saucepan and put all the stock, onion and cauliflower in it. Stirring it bring to boil. Now cover and simmer for approx. 15 mins till it becomes soft. Add walnuts, milk and stir this thoroughly. With the help of a blender or food processor prepare a smooth puree and then pour the contents back into the pan. After adding salt and pepper bring the soup to boil and serve hot.

Preparing the Shahi Tukra is Simple!

Ingredients –

  • 6 slices – brown bread (air dried for 3 to 4 hours or pan toasted until crisp)
  • 3 tsps – sugar
  • A handful of dry fruits of your choice
  • Pinch of saffron
  • 1/2 tsp – green Cardamom powder
  • 1/2 cup – ghee
  • 3.5 cups – whole milk ( to replace the condensed milk)
  • Almonds paste (15 almonds soaked for 8 hrs)

Method –

Take 2 tbsp milk and soak saffron in it. Now take 3.5 cups of milk, add the soaked saffron to it and boil on a low flame till it gets reduced to around 2 cups. Make a smooth paste of 0.25 cups of milk, sugar, cardamom powder and soaked almonds. Add this paste to the condensed milk preapred earlier, boil for approx. 10 mins maintaing a low flame. Stir continuously and then keep this aside to cool down. Make 2 slices of bread each by slicing the bread diagonally and cutting away the bread crusts. Toast the bread on a tawa after spreading ghee on it. Toast it to make it crispy. You are almost done. Just place the bread pieces in a serving plate and pouring the rabri over the bread you may garnish them with dry fruits and then serve hot.

Try the tasty and spicy Sev Curry!

 


Ingredients:

  • 1 tomato, diced
  • 1 green chilli, chopped ,br> 2-3 cloves garlic, chopped
  • A pinch of turmeric powder
  • Salt to taste
  • 100g thick sev
  • 1 onion, sliced
  • Coriander leaves to garnish
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder

Method:

So, first heat oil in a pan. Now among the ingredients add to it green chillies, jeera, garlic, onion and cook until the colour of the onion turns to golden brown. Now add sev. Further add, turmeric-chilli-coriander powder. Also add tomato and a cup of water. Maintaining a low flame cook till the tomatoes become tender. Finally the garnishing can be done with coriander leaves and you may serve now.

Ever tasted the Arbi Mutton?

Ingredients –

  • Mutton – 500 gms
  • Ginger-garlic paste – 2 tbsp
  • Arbi, big size – 300 gms
  • Coriander powder – 2 tbsp
  • Tomato puree – 1 cup
  • Oil – 3 tbsp
  • Red chilli powder – 2 tsp
  • Salt to taste
  • Jeera powder – 3 tsp
  • Haldi powder – 1/2 tsp

Method –

Keep your arbi ready by peeling them whole. Now heat half of the oil and fry arbi pieces to the extent they turn golden brown. Keep aside these and fry mutton pieces after adding them in the same oil. This has to be done till all the water evaporates. Fry and stir them after mixing in all the spices, salt and ginger-garlic paste. Keep adding oil when required and cook till you sense a fine aroma. Add the tomato puree, stir gently and then mix in pieces of arbi and also add two cups of water. Maintaining a low flame cook the mutton pieces till they are tender after covering with a lid. Add a little more water if the pieces of mutton don’t look tender.

Ingredients –

  • 1 cup milk or milk and water
  • 1/2 cup ghee or butter
  • 1 cup suji
  • 1/2 cup sugar
  • 2 cardamoms
  • 2 tablespoon any type unsalted nuts (optional)
  • 2 tbsps. raisins
  • 2 bay leaves

Method –

Fry suji in ghee. Once you are done then add all the above mentioned ingredients and saute and stir them. Fry these till all the milk gets absorbed. Once the ghee comes to the surface with a slight glaze remove the pan from heat. You may either ways serve it as hot or cold.

Ingredients –

1/2 cup sugar
3/4 cup milk
2 cups flour
2 teaspoons baking powder
1/4 cup vegetable oil or Butter
1 cup Kissan mix fruit jam
Pinch of salt
Pinch of salt
Pinch of cooking soda

How to prepare –

The first step is to keep your oven ready while you prepare the other stuff. So, preheat your oven to 350 degrees F (180 degrees C). Now, mix flour, baking powder, sugar, salt and soda in a bowl and stir it well. On the other hand, in a small bowl mix oil and milk and pour the flour mixture in it. Remember not to beat. Now gently stir this in jam. Pour this batter into the already prepared pan and bake at 350 degrees F(180 degrees C) until they turn golden brown or for at least 20 mins.

Time for a nice Mojito!

Do you know what a Mojito is?

Well, Mojito is usually a cocktail which mainly consists of five key ingredients. And these are – white rum, lime juice, mint, sugar and water.

Let’s learn how to prepare it –

Ingredients:

8 – mint leaves
2 – lemon wedges
3 – white sugar sachets
4 – mint sprigs
45 ml – White rum
2 – lemon slices

Preparation:

Take a nice glass. Add mint leaves and sugar and muddle gently. Further add the lemon slices and lightly muddle again. Keep a glass ready with crushed ice. After adding rum to the mixture prepared earlier add it to this glass. All you are left is the garnishing part and that can be done with lemon wedges and mint sprigs.

How to prepare Soya Fennel Rice?

Ingredients:

  • 1 cup soya chunks
  • 1/4 cup soya granules
  • 2 cups cooked rice
  • 1/2 tbsp pepper powder
  • Salt
  • 1 tbsp tomato paste
  • 2 tbsp of fresh fennel (cut into 1/2 inch pieces)
  • 2 tbsp olive oil
  • 1 tsp ginger-garlic paste

Preparation:

Add a little salt in hot water. Soak the chunks of soya in this water for approx. 10-15 mins. The granules of soya are to be soaked separately in warm salted water. Drain out the soaked soya once they have swelled. Also squeeze out the excess water as you don’t require it. The next step requires frying the soya chunks and granules. So, heat oil and fry them for approx. 2-3 mins. Now, add the pieces of fennel, fry for a few seconds and then cooked rice. Keep stirring this gently. The final step is of mixing the paste. Once you’ve mixed the paste stir it again. Your soya fennel rice is ready and you may serve it with mango chutney or raita.

Ingredients:

  • Coconut rum – 1 fluid ounce
  • Vodka – 3/4 ounce
  • Pineapple juice – 1 fluid ounce
  • Grenadine syrup – 1 dash

Preparation:

Using a shaker combine the vodka, rum and pineapple to form a frothy liquid. Add a lovely little touch of grenadine after pouring this mixture into a martini glass (hence the name). Garnish with a slice of orange.

  • Orange juice – 1/4 cup

Preparation:

Preparation was never so easy. And for this reason this is one cocktail which you can enjoy when you are tired and feel like having a drink without spending much time in it’s preparation. All you’ve got to do is take 3 parts of your champagne and one part of your orange (any other citrus juice will also do) and mix them. If there is anything left then it is the drink to be enjoyed.
